I have played against the Wynn pretty often and he can be pretty aggressive preflop but rarely so in the UTG position. I suspect at the very least he would have a-10ss or a pp of 7's or higher.
I definitely would lead into him though having flopped top set and a board that does not contain a flush draw. He would float a bet with 2 overs here hoping to pick up a pair or even a straight draw. I think betting about 1/3rd pot is a great lead under most circumstances although at times I will lead for 1/2 or even 2/3rd pot. It definitely depends on the situation though and can be so position and player variable to say when I do bet more.
One thing I do when playing in a tournament is to play at the same tempo as often as possible not to tip my opponents off one way or the other on the strength or weakness of my hand. Of course you do have tough decisions at times and therefore you do have to take the time and think things through.
Yes, you could have won more by betting all three post flop betting rounds. Plain and simple. That is clearly the best play under most circumstances. Still, you never know. He is capable of getting away from some of his weaker holdings here but how much are you going to win if he does have a weak hand? a lot less downside and more upside betting that set given his raise and his position in the hand!
Finally, I would rarely 3 bet it preflop from the sb against an UTG raiser. Even if it is 7 handed. The risk of him coming over the top is too great and that is a tough decision you will then have to make. You also do have the BB who could (albeit rarley) wake up with a real hand too. If The initial raiser was in late position I would probably 3 bet the 10's. but not in this particular scenario.
