Probably because that was the currency it always used before Black Friday, and it was much easier to keep it that way than try to change it.
It's probably also easier to convert from US dollars to whatever currency a player wants to cash out in, rather than have to try to do that every time a player wants to play in a tournament or cash game.
It's just best to keep it that way for consistency, both at the tables and in players' accounts.

Even thought US can't play anymore over there, I do think USD is so much better than the others.
